Ingredients:
- 2 cups mashed potatoes
- 1 cup mixed vegetables (such as carrots, peas, corn, and green beans), finely chopped
- 1/2 cup breadcrumbs
- 1/2 cup grated parmesan cheese
- 1/4 cup chopped fresh parsley
- 1 egg, beaten
- Salt and pepper, to taste
- Vegetable oil for frying
Instructions:
Mix the mashed potatoes, mixed vegetables, breadcrumbs, parmesan cheese, parsley, egg, salt, and pepper in a large bowl until well combined.
Shape the small croquettes with your hands.
Heat the vegetable oil in a pan over medium heat.
Once the oil is hot, add the croquettes and fry until golden brown.
Remove the croquettes from the pan and excess oil on a paper towel.
Serve the vegetable croquettes warm with your favorite dipping sauce.
Note :
If you're short on time, you can use frozen potato croquettes as a base and add your mix of vegetables to them. Follow the cooking instructions on the package for the potato croquettes, and then mix in the chopped vegetables, breadcrumbs, cheese, and parsley before shaping them into croquettes and frying them.
